SEA-SALTED CARAMELS
Yield: approximately 20 Caramels

Ingredients:
Sunflower oil, for greasing
2/3 cup superfine sugar
3/4 cup light brown sugar
1/2 cup unsalted butter
¾ cup and 2 tablespoons heavy cream
3 tablespoons corn syrup
1 tsp. sea salt flakes

Preparation:
• Grease a 6” square pan with sunflower oil.
• Place the superfine sugar in a deep saucepan with 2 tablespoons cold water. Set the sauce pan over medium heat until the sugar dissolves, then bring to a boil and continue to cook until the sugar has turned to a deep amber-colored caramel. (If sugar starts to re-crystallize, add a small amount of water and scrape the sides of the pan.)
• Remove the saucepan from the heat and immediately add the remaining ingredients. Stir until smooth.
• Return the saucepan to the heat and bring back to a boil. Continue to cook until the caramel reaches 250 degrees Fahrenheit (130 degrees Celsius) on a candy thermometer. (This typically takes 45-50 minutes.)
• Remove from heat, let settle for 30 seconds, then pour into the prepared pan and allow to cool.
• Turn out the pan and break caramel into serving-size pieces. Top with sea salt flakes.
